Cannellini Beans and Spinach

I caught the tale end of an Italian cooking show on PBS that was using cannellini beans.  The recipe itself looked fantastic but I couldn’t recall it and I ended up watching Molto Mario later and got confused on the recipes.  Here is what I pieced together for myself.

Cannellini Beans and Spinach

A delicious, unique, and simple sidedish.
Ingredients
  • 1 can of Cannellini beans
  • 1 strip of bacon
  • 1 small yellow onion or half of a medium onion
  • 1/2 minced garlic clove
  • 1 handful of baby spinach
  • 2 tsp of olive oil
  • 1 tbsp of chicken/vegetable broth
Instructions
  1. Fry the bacon up in a pan, pull it out and put in the minced onion.
  2. Let it cook a bit and then add in the garlic followed by the beans that have been rinsed.
  3. Drizzle in olive oil and broth followed by the spinach.
  4. Stir it around until the spinach is wilted.
  5. Chop up the bacon, add it to the pan and season.
  6. I think parsley would be good, but I didn’t have any, went with a generic Italian season mix which lacked the oomph I wanted.
  7. I salted the dish after I served it up because I’m really trying to monitor my sodium intake and couldn’t figure out just what the bacon was going to do.

 

Overall it tasted wonderful.
